Introduction:
Konjac glucomannan fiber powder is obtained from the tubers of the Amorphophallus konjac plant. Chemically, the powder is a high-molecular-weight polysaccharide comprising mannose and glucose sugars primarily. Virtually tasteless and odorless, konjac is essentially non-caloric and rich in soluble dietary fiber. Regarded in China as an important food ingredient for more than 3000 years, konjac is key to the preparation of traditional foods such as noodles (konnyaku) and more modern innovations
